Simple Whole30 Arugula Salad
Spring is coming and that means it’s time to bring on the cool refreshing salads! I love my Simple Whole30 Arugula Salad. The name says it all, it’s simple and healthy for you!
Wash and dry your arugula, I use this salad spinner. Add your arugula to a salad bowl.
I LOVE these bowls and have two sets-we don’t really use plates anymore, we just love the large bowl. I have had mine for two years now and they are holding up extremely well. (The photo below is a stock photo from he manufacturer).
Next chop up your toppings. I use avocado, hard boiled eggs, cucumber and chives.
If you have an intolerance to high fodmaps like I do chives are a great option. If you only use the green part they are love in fodmaps.
I love a champagne vinegar on this but 40Aprons Whole30 Dump Ranch Dressing is amazing and would be fabulous on this salad! I also love to sprinkle some pink sea salt on top of my salad.
You may also want to prep your ingredients when you get home from the grocery store to make salad making easy. Store them in your fridge until you’re ready to use them. But I personally wouldn’t cut the avocado until ready to use it so it doesn’t turn brown.

2 cups of arugula
2 hardboiled eggs
1/2 cup shredded carrots
1/2 cup of chopped cucumber
1/2 avocado sliced
Dressing of your choice
- Wash and dry arugula.
- chop hard boiled eggs, carrots, chives, cucumber and avocado.
- add arugula to a salad bowl and top with the remaining ingredients.
- Sprinkle on a little salt and top with the dressing of your choice.
