Oh, ya’ll these Lemon Banana Pancakes are amazing! These aren’t super sweet unless you put lots of syrup on them as I did. The lemon and banana flavor really comes through and is so filling. I encourage you to give these a try.

How to make Lemon Banana Pancakes

These are so easy to make, so let’s get to it!

In your stand mixer add two peeled bananas cut into pieces and blend until they are a liquid, mine took about four minutes. Then add the vanilla, maple syrup, and vegan egg. I blended mine for about one more minute. Turn off the blender and add all of your dry ingredients then starting on a low setting start blending slowly. You will slowly turn up the blender as the flour incorporates, we do this slowly so you don’t wear your flour, trust me I speak from experience, heehee. If you feel it’s too thick add 2 TBSP of almond milk if it’s not thick you can leave it out.

Now that our batter is done we want to heat up our griddle. I use a non-stick griddle so I don’t need to use any spray on the griddle. If you don’t have a non-stick you will need to spray your griddle with oil so it doesn’t stick.

I used a 1/3 measuring cup and poured out seven pancakes onto my griddle. You can use a smaller measuring cup and have more pancakes. Once they start to bubble flip them and let the other side cook for approximately 2 minutes or until done, each griddle will be different.

These pancakes are sure to please. The lemon flavor pops and is great with a cup of coffee first thing in the morning.

The center of the Lemon Banana Pancakes are slightly doughy because they are mainly banana’s. If you love things like doughy brownies you will so adore these!!

  • Peel your bananas and put in a stand mixer bowl, mix until they become as much of a liquid as possible, I blended mine for 4-5 minutes.
  • Add in your vegan egg, vanilla and honey, continue to blend.
  • Now add all the dry ingredients and blend until combined.
  • Heat a non-stick griddle then for your pancakes pour our 1/3 cup of batter onto the griddle. When they bubble flip and cook for 2 minutes or until done.
