Flax Seed Crackers
Sometimes you just crave crunchy crackers and my Flax Seed Crackers are my favorite! Many gluten-free crackers are filled with things I don’t eat, so I wanted to create my own healthy alternative.
Rather than bore you with a long description of why flax seeds are healthy, so check out these graphics instead! Do your own research and ask your doctor if flax is a good addition for you. They’re great ground up on a baked potato, on a salad, as well as an add on to recipes. One of my faves? Try them with guacamole or hummus. Delicious!
I also recommend you buy them whole and grind them yourself since you can lose nutritional value when they sit too long. I love Terrasoul Flax Seeds, give them a try.
These crackers are super easy to make, and I promise they won’t last long when they’re done! You can feel good that you’re eating something that’s healthy for you and has great nutritional value.
Mix all of the dry ingredients in a bowl.
Add the water and stir. Let it rest for a few minutes then stir again.
Spray 2 cookie sheets with coconut oil spray (I get mine at Trader Joes). Cut the dough in half and smash half of the dough on one of the baking sheets, cover with parchment paper, and roll it out to the desired thickness. I used my coconut oil spray can as a makeshift rolling pin – it was the perfect size. Using a pizza cutter, cut out your crackers. This makes it much easier when they come out of the oven.
Now, simply bake at 250 degrees for 1-1/2 hours. When they’re done, let them cool, then break them up and enjoy!
Not that you’ll have to worry about these going stale as they likely won’t last long in your house, but I’d suggest eating them within a week to maintain freshness.
Flax Seed CrackersCourse: Snacks
- Preheat over to 275 degrees
- Add all ingredients to a large bowl and stir to combine. Let it sit for 3 minutes then stir again.
- Spray a baking sheet with oil and put half your dough on the pan, cover with parchment paper and roll out the dough with a rolling pin until the crackers are at your desired thickness. Remove the parchment paper and using a pizza slicer cut into squares. This makes removing them easier. Repeat with the other half of the dough.
- Bake for 1 hour and check for desired crispiness. If you want the crispier bake for an additional 30 minutes. Crackers should be easy to separate when done.
