Breakfast is the most important meal of the day so I keep it as healthy as I can. I eat my Easy Bacon Breakfast Hash often. It’s fast and easy to make so it’s great for any day of the week.

I love Applegate Naturals Bacon. It’s sugar free, clean and the pigs are humanly raised, which is important to me. Plus it’s Whole30 approved and I try to follow a Whole30 diet 80% of the time.

So to begin let’s cook out bacon, I cook 3 slices but 2 would work great as well.

While the bacon is cooking I peel and chop one large sweet potato into small bite sized pieces.

When the bacon is done remove it from the pan, I let mine sit on a paper towel to absorb the grease. You can remove some of the bacon grease from the pan but leave a little so the sweet potatoes don’t stick. Add your sweet potato to the bacon grease left in the pan. Cook on low stirring often until the potatoes are done. Cooking on low is VERY important, you don’t want to burn your sweet potatoes. I prefer my potatoes crunchy so I turn my burner up at the end to get them crispy but you don’t have to do this.

When the sweet potato is done move the potatoes into a mound, you don’t want many spaces in between the potatoes or the egg with seep through it and burn. Crumble your bacon onto the sweet potato.

Next crack one or two eggs over the top and sprinkle the eggs with the spice of your choice. Cover the pan and let the eggs cook on low. When the eggs are done remove from the pan, plate and enjoy!
