Dreams do come true! I’m 100% serious when I tell you that I dreamed about this recipe, a Chocolate Chip Cookie for One. I woke up one morning, headed to the kitchen, and started testing it. Many times. Yep, a cookie craving made this happen. We’re all probably much better with one cookie versus a dozen. Self-control and all, right? You’ll love this single-serving recipe.
These make a yummy cake-like cookie that is perfect for a quick snack or dessert. They’re super easy; just add everything to a bowl and stir until combined. Then spoon out four cookies on a cookie sheet and bake. Pretty easy!
These are great with a cup of coffee or tea. Your kids and hubs will enjoy – if you decide to share!

Single Chocolate Chip Cookie
Course: Dessert1-2
servingsMakes 2 large cookies
Ingredients
2 1/2 tablespoons almond flour
1 egg
1 tbsp coconut flour
1-2 tbsp Enjoy Life chocolate chips- depends on your love of chocolate
1/2 tsp vanilla extract
1 tbsp almond milk
2 tbsp coconut sugar
1/4 tsp baking powder
2 tsp ghee, coconut oil or vegan butter
1 tbsp tapioca flour
Directions
- Preheat the oven to 350.
- Add all ingredients in a bowl and combine.
- Line a baking sheet with parchment paper, spoon four small cookies on the cookie sheet.
- Bake for 14 minutes. Times may vary depending on your oven.
