One thing missing from the grocery store is a great gluten and dairy-free English Muffin. Well, I have created the Best Gluten-Free English Muffin! I love this recipe because I can make just one when I feel like it. It’s light, fluffy, not dried out and tastes fabulous.

These make a fabulous egg and ham breakfast sandwich, a hamburger bun, the kids will love these with peanut butter and jelly, there are so many ways to enjoy these. Share with us in the comments how you enjoyed them! I love it with fresh avocado and salt, super simple and very filling.

Making my English Muffin couldn’t be easier! Just mix everything in a Pyrex dish, cook in the microwave for 90 seconds then toast it to your liking, easy peasy! I toast mine in my air fryer.

All of my stores here carry Simple Mills Artisan Bread Mix but its never less that 7.99. I have found it on Amazon (at the time this was posted) for 4.64 each, you can find it here.

I have this English muffin so many ways. I love to toast it and add mashed avocado and bacon somedays. Or add an eggs and have the yolk run over everything, because who doesn’t love that, YUM!!

Ingredients

Directions

  • In a 2 cup round Pyrex dish add all ingredients and mix until thoroughly combined.
  • Microwave on high for 90 seconds. Remove from the microwave, it will be very hot.
  • When done turn upside down and onto a cooling rack, let it cool until you can handle it.
  • When cooled slice in half. Toast in your air fryer to until done you reach the desired toastedness, then just enjoy!
