
Baked Salsa Chicken
Today I have a super easy dinner recipe for you, Baked Salsa Chicken! This is a favorite dish at our house. It’s easy and tastes like you’ve been slaving in the kitchen for hours. I hope that you enjoy this as much as we do!
Let’s make Baked Salsa Chicken!
Simply add chicken thighs to a baking dish and cover with salsa. Bake for one hour at 350 degrees. While it’s baking we cook basmati rice. We use Matteo’s mild salsa, the taste is amazing! And the mild still has some kick to it.

To plate your dinner add some rice to your plate and top with chopped chicken and salsa. If you want additional toppings just think tacos. Some topping ideas: olives, avocado, shredded lettuce, and black beans. Get creative and enjoy, no one will know it was this easy!

2 pounds of chicken thighs
1 jar of salsa- we use Matteo’s
Olive oil
Directions
- Preheat the over to 350 degrees.
- Spray a baking dish with oil to prevent sticking.
- Lay out the chicken thighs in the baking dish.
- Cover the thighs with your jar of salsa
- Bake for 1 hour or until the thighs are at 165 degrees.
