Avocado and Bacon English Muffin
I love a quick and healthy breakfast. Breakfast is so important to how I function during the day. I need something that is filling and has a decent amount of protein and fat. With a combination like this I stay full for hours. So this is one of my favorite meals in the morning.
Let’s make my Avocado and Bacon English Muffin!
Let’s first get our bacon started so this is easier to assemble. I cook two pieces of Applegate Bacon in a frying pan. I love this bacon because it is Whole30 approved and I try my best to stick to a Whole30 diet. You can read more about that here.
So now we want to make my English Muffin Recipe. This is a quick and easy recipe. This English muffin and doesn’t fall apart. It stays together very well, unlike many other gluten-free buns. See the photo below, I am half way through my breakfast and its all intact. Also, notice how it is not dense like others gluten-free breads.
All thats left now is to slice our avocado, I usually use 1/2 of one avocado. Once your English muffin is toasted I add a 1/4 of the avocado to each slice and smash it down so it stays intact, avocado slices always fall out of the bun so now I smash like the Hulk, hehe! So now add your bacon and you are ready to enjoy this lovely breakfast! Make yourself a cup of coffee and have a great start to your day!

- Make your bacon, I use a frying pan but you can bake it in the oven if you prefer.
- Make the English muffin recipe and toast.
- Slice your avocado. I use a 1/4 of an avocado on each slice of the English muffin then smash it down so it doesn’t fall off the bun.
- Add your bacon and enjoy!
