My Amazing and Easy Whole30 Egg Salad is super easy and fast!

First you will need to make my Easy Instant Pot 7 Minute Hard Boiled Eggs and you may also want to make my Easy Peasy Mayonnaise as well. When I don’t make my own mayo I use Sir Kensington’s.

Let’s make my Amazing and Easy Whole30 Egg Salad

Once you’ve got your hard boiled eggs peeled you’re going to chop four of them into small pieces. Some people like to use an egg slicer but I just chop them. Add the chopped eggs to a bowl and add 1/4 cup of mayonnaise and 1/2 teaspoon of garlic powder, one chopped chive and a 1/4 teaspoon of pink sea salt. Then stir and chill.

When chilled add to the top of a salad or to your favorite gluten-free bread and enjoy! If you are keto avoid the bread and have a lettuce wrap! Check out my Flax Bread for One, its makes an amazing sandwich!

Ingredients

  • 4 hard boiled eggs

  • 1 chive chopped into small pieces

  • 1/4 cup Sir Kensington Mayonnaise or my Easy Peasy Mayonnaise

  • 1/2 tsp garlic

  • 1/4 tsp pink sea salt

Directions

  • Chop four of your hard boiled eggs into small pieces. Some people like to use an egg slicer but I just chop them. Add the chopped eggs to a bowl and add 1/4 cup of mayonnaise and 1/2 teaspoon of garlic powder, chopped chives and a 1/4 teaspoon of pink sea salt. Then stir and chill.
  • If you prefer more mayo then add it slowly until you get the desired consistency for you. Keep in mind to add it slowly because you can’t take it out if you add too much.
