Quick and Easy Mexican Taco Baked Potato

I was craving tacos so I put together this Quick and Easy Mexican Taco Baked Potato- with CHEESE! It’s super easy and so yummy! It’s really a great meal for when it’s cold out because it’s so comforting.

How to bake a potato

If you are new to cooking this is a great beginner recipe. Preheat your oven to 425 degrees. Wash your potato, I like to scrub them so I know that all of the dirt is off of them. Then, with a sharp knife poke it a few times on each side. This will let any steam out. I spray mine with olive oil on all sides and then sprinkle with sea salt. I used to just pour the oil out of my olive oil bottle but so much was wasted. I now use EVO Oil Sprayers. They spray a small amount of oil, just what you need, I save a lot of oil this way, you need to get yourself some! Plus you get two so you can use one for olive oil and the other for avocado, or whatever else you use.

Bake your potato for 1 hour, then use a knife to check for doneness. You potato is done when the knife goes in and out without any trouble.

Then once done pour this over the top of anything you can think of and you will be happy you did, your kids and hubby will love it and ask for more! I learned that my husband who isn’t dairy-free has been using it too, that’s a big compliment!

Let’s Eat!

Now let’s plate our dinner. I love a big plate, I found these amazing white bowls on Amazon and we have literally used them every day since Christmas, I don’t use my dinner dishes any more. I love the size of them, they are a plate and bowl combined.

Cut open your potato, be careful, it’s really hot! Add your taco meat, cheese, and toppings of choice, then just eat!

Wildone Baking Sheet with Rack Set (3 Pans + 3 Racks)- This is such a great deal, I love these.

  • Chop your onion and cook in a little oil until almost done. Add your ground beef to the pan and stir until it is done. Add your taco seasoning, following the directions on the package.
  • When your potatoes are done slice open, add your taco meat, cheese and toppings of choice.
