Mayonaise

I use mayo on pretty much everything. When I started eating better and reading labels I noticed that a lot of mayonnaise had ingredients in it I didn’t want to eat so I learned how to make my own. It’s so easy, anyone can do it!

All you will need is light olive oil, apple cider vinegar, lemon juice, salt, pepper, and one egg. Add all of the ingredients to a tall mason jar, Put your immersion blender in the jar, hold onto the jar and blend. Slowly bring the immersion blender up. That’s it, it should be blended and ready to eat.

I love to use different spices for different meals. I love adding Trader Joe’s Chilli Lime seasoning. Sometimes I will do a garlic and parsley mayo for sandwiches, there are so many combinations you can try, use your imagination.

Sometimes mayo can come out runny. I have added a second egg when this has happened and that has helped thicken it up. Make sure that your eggs are at room temperature.

  • Add all ingredients to a mason jar.
  • Blend with an immersion blender until combined. You will start with the immersion blender at the bottom and slowly bring it up to the top of the mayo. Be sure to hold onto your jar.
  • Store covered in the fridge, it will keep in the refrigerator for 1 week.
