Almond Shortcake

Dairy-Free Whipped Cream

Making dairy-free whipped cream can be difficult but if you follow each step it will turn out great, short cuts will cause it to be runny.

The night before you make your whipped cream put your canned coconut milk, mixer bowl and beater in the fridge. This keeps the coconut milk from getting too runny as you blend it.

Open your coconut milk cans, scoop out the firm coconut cream and leave the runny liquid in the can. Add to your mixer and blend on low for a few seconds to lightly mix, stop the mixer and add your powdered sugar and blend on medium until blended well. Don’t over mix or it will get runny as it warms up. Serve on your favorite shortcake, strawberries, pancakes, brownies or whatever you enjoy!

Our Dairy-Free Whipped Cream is excellent with our Almond Shortcake.

If your whipped cream is too runny you can add a little arrowroot or tapioca starch to thicken.
