Chili in the Instant Pot

My husband loves chili, it doesn’t matter what time of year. So today at the grocery store he asked for chili even though it’s June, so I was happy to make this for him. Chili in the Instant Pot is one of our favorite meals.

I find chili tastes a lot better in the Instant Pot than it does in the slow cooker or on the stove. Plus it’s faster. In 40 minutes you have a tasty meal that will feed a large family.

I prefer to buy dried beans for my chili because they are cheap and easy to make in the Instant Pot. I use one cup of dry kidney beans and one cup of white cannellini beans. Simply rinse and remove any broken beans and add to your Instant Pot. Add enough water to come one inch above the beans. Set you Instant Pot to 10 minutes and cook your beans, make sure your pressure release is closed. When done release the steam and remove the lid. Strain your beans and rinse then add back to your Instant Pot.

Add the rest of the ingredients to the Instant Pot and stir to combine. Set the timer to pressure cook for 30 minutes. Release the steam and remove the lid. That’s it, it is pretty easy. All that’s left to do it enjoy!

Ingredients

  • 1 pound ground beef, venison or pork

  • 1 onion chopped

  • 2 tsp garlic chopped

  • salt and pepper to taste

  • 1 cup dried red kidney beans

  • 1 cup dried cannellini beans

  • 1 1/2 cups chicken bone broth

  • 1 28 ounce can of crushed tomatoes

  • 2 tbsp of chili powder

Directions

  • Rinse and remove any broken beans and add to your Instant Pot. Add enough water to come one inch above the beans. Set you Instant Pot to 10 minutes and cook your beans, make sure your pressure release is closed. When done release the steam and remove the lid. Strain your beans and rinse then add back to your Instant Pot.
  • Add the rest of the ingredients to the Instant Pot and stir to combine.
  • Set the Instant Pot to pressure cook for 30 minutes. Be sure the pressure valve is closed.
  • When down release the pressure valve to release the steam. When the steam is done releasing remove the lid, stir and serve!
