Chicken Salad

One of my favorite things to eat is chicken salad, I seriously eat it about 4 times a week for lunch. I have come up with a really easy way to make chicken salad for one.

I save chicken breast I’ve made for dinner or cook chicken tenders as needed, then I add about 4 ounces of chicken, spices and a tablespoon or two of my homemade mayo to my NutriBullet, just blend for 10 seconds and then enjoy!

I will slice a cucumber in half, remove the seeds, and put my chicken salad in the cucumber. I’ve had it on a salad, eaten it plain, put it in a gluten-free wrap, and grilled it, there are so many options!

  • 4 ounces of cooked chicken breast

  • 1-2 tbsp mayonaise

  • spices of your choice

Directions

  • Add all ingredients to a NutriBullet and blend for 10 seconds then eat.
