My husband Jim loves beef stew. I used to make it on the stove and it would take hours to cook. One year for Christmas he got me an Instant Pot and its a game changer! Stew now takes me 15 minutes to prep and 35 minutes to cook. If you are considering getting an Instant Pot, I’d recommend getting the 8- quart model. You can always just add less to the 8-quart if you buy a smaller one, and you’re not limited to how much you can cook. Just my two-cents worth! :o)
All you need to do for this easy recipe is chop all your produce, open the can of tomatoes, and defrost the stew meat. Add all of the ingredients to the instant pot and stir, then push the stew button, grab a glass of wine, and relax while dinner cooks. Super easy! Everyone will think you cooked for hours. Shhhh…
If you want to add additional veggies, go for it.

Beef StewCourse: Dinner
1 1/2 pounds beef stew meat
1 onion chopped into large pieces
3 large potatoes, peeled and cut into 1″ pieces
5 large carrots chopped into 1″ pieces
3 teaspoons chopped garlic- or less if you don’t like too much garlic
3 tbsp dried parsley
1 tsp onion powder
1 28-ounce can of Muir Glen, Organic Crushed Fire Roasted Tomatoes
1 cup water
- Open the can of tomatoes and dump in the Instant Pot.
- Chop all of your produce and add ot the IP
- Add remaining ingredients.
- Stir and close the lid. Make sure the vent in closed. Push the stew button and wait. Super easy!
